i've been living out of a suitcase for the past week, bouncing between airports like a pinball machine that's had too much coffee, surviving mainly on airplane pretzels and dreams. somewhere between terminal b and my third delayed flight, i had this wild craving for something that wasn't wrapped in plastic—you know, actual food with actual flavor. that's when the idea hit me like a splash of hot sauce: why not wrap something delicious instead? welcome back, kitchen confidants, and hello to our new arrivals (you picked a spicy week to join us).

CHERRY CHIPOTLE BBQ SHRIMP WRAP in 15 minutes, max. throw your favorite ingredients in there if you want to switch things up—maybe add some corn, swap the pepper jack for cheddar, or go wild with different greens. as long as you keep that cherry chipotle magic happening, you really can't go wrong. |

INSTRUCTIONS
SHRIMP
in a microwave-safe bowl, toss the shrimp with olive oil and Cherry Chipotle Ale Rub, ensuring even coating. cover the bowl with a microwave-safe lid or plate, and microwave on high for 1-2 minutes, until the shrimp are warmed through.
COAT THE SHRIMP
drain any excess liquid from the bowl, then add BBQ sauce and pepper jack cheese, stirring to coat the shrimp. microwave for an additional 15-30 seconds, or until the cheese is melted.
AVOCADO
in a small bowl, mash the avocado with lime juice and a pinch of salt until smooth and creamy.
COMBINE
lay the tortilla flat and spread the avocado mixture evenly over the center. spoon the shrimp mixture on top, then add shredded lettuce, diced tomatoes, and a sprinkle of fresh cilantro or parsley for added freshness.
ROLL
wrap up the tortilla, folding in the sides and rolling tightly from bottom to top.
