THE GARLIC PASTA THAT PLEADED NON GUILTY

DENY, DEFEND, DEVOUR

WELCOME BACK TO DINNER PARTY
[VOL. 8]

there’s nothing like the post-holiday feeling of wanting to only eat salad for the rest of your life. it’s a masterclass in limitless carb indulgence, with an advent calendar that never ends. it’s a lot—but here’s the good news: today’s recipe will keep feeding your carb load because the holidays don’t actually end until January 20th at 9:00 Pacific time.

welcome back. to those just joining, i’m jeremy—your guide to making good food with minimal bullsh*t. and you’ll only need a microwave.

today we’re making GARLIC BURRATA CAVATAPPI. think tender, swirly pasta coated in a luscious, garlicky sauce made with crème fraîche, Pecorino Romano, and a hit of lemon. the peak? a velvety ball of burrata that melts into the pasta like it’s auditioning for a rom-com.

this recipe is perfect for when you’re craving something easy and comforting just for yourself, or when you need to impress a guest without turning your kitchen into a war zone. plus, it’s versatile enough to be a main dish, a side, or a late-night snack that feels way fancier than it should.

TOOM ORIGINAL GARLIC DIP

toum is a middle eastern garlic sauce that i grew up with, so i was very excited to discover this brand called Toom that makes an amazing version you can buy in stores. it’s marketed as a dip—amazing with pita chips—but i’ve decided to use it as a sauce for today’s dish.

like i said, cooking at home doesn’t have to feel like a five-act play. simplicity makes the best dishes, and comfort food always delivers. my goal is to share recipes people actually want to make—and give them the freedom to tweak, experiment, and make them their own. every week, I’ll share a recipe you can make entirely in a microwave. yes, a microwave. trust me, you won’t believe what this one appliance can do.

whether you’ve been whipping up soufflés for years or think your stovetop is just extra counter space, these recipes are here to make cooking easy, accessible, and shockingly good. you’ll see after you try today’s pasta.

in the MICROWAVES KILL section, you’ll find recipes that are quick, foolproof, and taste amazing—ready in anywhere from 5 to 30 minutes.

GARLIC BURRATA CAVATAPPI

in 10 minutes start to finish you’ll have Garlic Burrata Cavatappi. as long as that TOOM’s Original Garlic Dip magic does its thing, feel free to make it your own—swap cavatappi for penne, trade burrata for fresh mozzarella, or toss in sautéed spinach for an extra veggie boost.

cooking should feel effortless, and this recipe is here to prove you can have creamy, dreamy comfort food without having to work your ass off.

INGREDIENTS

  • 1 cup pasta (cavatappi)

• 1 1/2 cups water

• 2 tablespoons TOOM Original Garlic Dip

• 1/4 cup grated Pecorino Romano cheese

• 1/4 cup crème fraîche

• zest of 1 lemon

• juice of 1/2 lemon

• 1/2 teaspoon cracked black pepper

• 1/4 cup fresh basil leaves, torn

• 1 small burrata ball (or 1/4 cup fresh mozzarella)

• toasted breadcrumbs or crushed pistachios (optional garnish)

INSTRUCTIONS

  1. PASTA

place pasta and water in a microwave-safe bowl. ensure the bowl is large enough to prevent overflow. microwave on high for 7-9 minutes, stirring halfway through, until the pasta is al dente and most of the water is absorbed. adjust time based on pasta type.

  2. SAUCE

add TOOM Original Garlic Dip, Pecorino Romano, crème fraîche, lemon zest, lemon juice, and black pepper. stir thoroughly to combine. microwave for an additional 1-2 minutes until the sauce is smooth and coats the pasta evenly.

  3. CHEESE

gently place the burrata on top of the hot pasta. let it soften for a minute before breaking it open to release its creamy interior.

  4. SERVE

garnish with torn basil leaves and, if desired, toasted breadcrumbs or crushed pistachios.
