well, january was crazy… let’s try this again, 2025.

welcome to DINNER PARTY. i’m jeremy fall, and if you’re new here, you can expect a lot of sarcasm and recipes that you’ll actually want to make. my background is as a chef, restaurateur, and author, and i started this newsletter to share creative higher-end recipes that are easy to make — entirely in a microwave.

a microwave is basically a way to heat water quickly, which you can use to cook different foods. it won’t kill you. don’t listen to the propaganda. my goal is to develop dishes that are better for you, easy to make and actually taste good.

today, we’re going for something stacked with layers of flavor: Miso-Tamari Glazed Eggplant with Aromatic Rice. eggplant gets a bad rap, but trust me—when it’s glazed in a deep, savory miso-tamari blend and soaks up all that garlicky, sesame-infused goodness, it becomes an absolute powerhouse. this dish is cozy but light, rich but balanced, and perfect for when you want something that feels indulgent but still borderline responsible.

also, the microwave is not cheating. think of it as a power move—less time cooking, more time eating.

JOZO BARREL AGED TAMARI SOY SAUCE

JOZO Barrel Aged Tamari is a deep, flavorful soy sauce with a smooth, complex flavor from traditional barrel aging while being less salty and more nuanced.

i’ve been getting comments from people thinking i get paid to promote these products. i don’t. i just like supporting all kinds of brands, especially smaller ones (also, no one has offered to pay me yet). but if you want this sauce, you can get it below.

simplicity makes the best dishes, and comfort food doesn’t have to be bad for you. my goal is to share better-for-you recipes people actually want to make—and give them the freedom to tweak, experiment, and make them their own.

MISO-TAMARI GLAZED EGGPLANT WITH AROMATIC RICE

this one’s technically vegan but i didn’t want to mention it earlier in the newsletter, because some of you might stop reading. it doesn’t use any fake substitutes, it just doesn’t use any animal products.

eggplant is one of my favorite vegetables and this recipe just hits.

INGREDIENTS

• 1 Japanese eggplant, sliced into ½-inch rounds

• 1 tbsp Jozo tamari

• 1 tsp toasted sesame oil

• 1 tsp maple syrup

• 1 tsp rice vinegar

• ½ tsp white miso paste

• ½ tsp garlic, minced

• ½ tsp ginger, finely grated

• ½ tsp toasted sesame seeds

• 1 tbsp scallions, thinly sliced

• ½ cup jasmine rice, cooked with a pinch of sea salt

• 1 tbsp cilantro leaves, for garnish

INSTRUCTIONS

  1. SAUCE

    in a microwave-safe bowl, whisk together the Jozo tamari, sesame oil, maple syrup, rice vinegar, miso paste, garlic, and ginger until smooth.

  2. EGGPLANT

    add the eggplant slices to the bowl and toss to coat evenly in the glaze. cover with a microwave-safe lid or plastic wrap with a small vent.

  3. MICROWAVE

    microwave on high for 3-4 minutes until the eggplant is tender and infused with the glaze.

  4. SERVE

    serve over aromatic jasmine rice, garnished with sesame seeds, scallions, and cilantro.
